Christmas Cake – healthy eating – cooked on an Electrickit Aga

The story

For those people (myself included) who are managing their diet for health, after years of committing sugar and fat  abuse – here is a bit of a life saver, cooked of course, in our renovated Electrikit Aga

 

HERE IS WHAT YOU NEED

Set your Electrikit Aga to 170 degrees

  • Line a 20cm Cake tin, prepare a round to cover the top to protect your bake
  • 75g sultanas
  • 100g of any dried fruit – apricots, cranberries, prunes, raisins
  • 25g candied fruit
  • 100ml boiling water for soaking
  • 1 medium banana
  • 2 eggs beaten
  • 75ml rapeseed oil
  • 1 medium carrot, courgette and apple, finely grated
  • 150g wholemeal flour
  • 1tsp baking powder
  • 3tsp mixed spice
  • Glace cherries for decorating
  • Almonds for decorating

 

Baking time is 1hour 30 minutes

Preheat your Electrikit Aga cooker to 170 degrees

Add the boiling water to all of your mixed dried fruit and set aside

Mix together the mashed banana, eggs and oil in a large bowl

Following on, add the grated carrot, courgette and apple

Now it is time to add the flour, baking powder and mixed spice

In addition, mix in the dried fruit

Finally, pour the mixture into the prepared cake tin.  Decorate the top with Glace cherries and almonds

Here is what you do

Bake on the middle set of runners at 170 degrees for about one hour 30 minutes (keep a watchful eye)

Cover the top of your cake with baking parchment to protect it from drying

After one hour, place a cold plain shelf beneath your cake

20 minutes before end of cooking time remove the top cover from the cake

Remove cake from the oven, test with a skewer and leave to cool.

Sprinkle with a small amount of icing sugar to serve (not too much of a sin and it is Christmas)
