This is the ultimate Chocolate Cake (with a nod to Lucy Young)
I cooked this cake for Harry’s birthday -it is Such an easy cake to make and it will feed 8-10 chocolate lovers
YOU WILL NEED:-
2 x 20cm loose bottomed sandwich tins, greased and lined
FOR THE CHOCOLATE PASTE:-
50g cocoa powder
6 tbsp boiling water
Mix together to form a chocolate paste
FOR THE CAKE
225g baking margarine – room temperature
225g castor sugar
225g self – raising flour
2 tsp baking powder
4 eggs
Now you need to add all of the cake ingredients except the cocoa powder and boiling water.
Following on add the cocoa mix to the cake ingredients and blend it all together.
When you have a lovely mix, fill your prepared tins equally and smooth the tops of each one.
ElectrciKit Aga owners – turn your temperature to 180 degrees and cook with the shelf on the second set of runners down from the top –
Bake the cake for 30 minutes and remove to cool. You may need to insert the cold plain shelf below the dish to shield some of the heat coming from the element for the last 10 minutes of cooking
FOR THE ICING
150g dark chocolate, broken into small pieces
Furthermore, 150 ml pouring double cream
Most importantly, leave this on the top of your aga in a bowl to melt. Once melted, set aside to cool and thicken up
50g white chocolate – either chips or buttons
After mixing the icing, cover the middle layer leaving enough to smoother the top of the cake.
Finally, decorate with the white chocolate buttons or chips and enjoy.
