How to make – Shortcrust pastry :
I know the general census of opinion is to use flaky pastry here but in all honesty I don’t like it and for the short-crust I believe it’s very easy to make ( ½ fat to plain flour: rub the fat into the flour with fingertips until it resembles fine breadcrumbs, then add a beaten egg to bring it all together)
BUT In my present mood I would say ‘buy some’!
You will need:-
8 x good quality outdoor reared pork sausages.
1 large apple, peeled and chopped
I red onion, diced
Salt and pepper to taste
2 tablespoons of red onion chutney
1 x free range egg
How to make
Set your ElectricKit Aga to 220 degrees in the Roasting Oven
If using a conventional oven then pre heat it to 220C/200C fan/Gas 7
What to do
Split the sausage skins along the side with a sharp knife and put the meat into a bowl
Add the peeled apple chunks and diced onion and season. Mix it together using clean hands.
Line a baking tray with Bake-o-Glide and lay out a sheet of pastry (well done if you made your own).
Imagine the sheet has a 5cm border around it, spread the red onion chutney inside this invisible border
Arrange your sausage meat in a roll down the centre of your pastry and score the border diagonally down each long side…about 2.5 cm apart to create a chevron effect.
Tuck in the top ‘ends’ first and then bring the side strands up to the top to make the plait effect. A dab of water on the ends of the pastry will help secure.
Finally, beat the egg and with a pastry brush glaze the sausage plait with it.
How to Cook
Place on the second set of runners down from the top with the cold plain shelf beneath and cook for about 30 minutes until golden brown.
