Cheese Straws

To Make Cheese Straws – You will need:-
375g plain flour
225g salted organic butter, diced
150g mature cheddar cheese, grated
50g finely grated fresh parmesan cheese
½ teaspoon of English mustard powder
Pinch of cayenne pepper
2 free-range egg yolks (use the whites
in a meringue case for a pudding)
2 tsp poppy seeds

Here is what you need to do

Set your ElectricKit Aga to 190 degrees

Rub the cold cubed butter into the flour using your finger tips until you have achieved the texture of fine breadcrumbs.
Stir in the cheese, mustard powder, cayenne and egg yolks.
Add 4-5 tablespoons of cold water and mix to form a firm dough.
Wrap in cling film and allow to rest in the fridge for 30 minutes.
Line a baking sheet with baking parchment or Bake-O-Glide.
Lightly flour a work surface and sprinkle over the poppy seeds. Roll out the dough into a square roughly 0.5cm thick. Cut the
square in half.
Cut each half into 1 cm strips, transfer carefully to your lined baking sheet and bake on the second set of runners down from the top for about 10 – 15 minutes (keep a watchful eye). Be careful they do not cook too quickly on the base – if so, place the cold plain shelf beneath to prevent from over cooking. The straws need to look crispy but not burnt!
Allow to cool on the tray
