A recipe especially for ElectricKit conversions
Victoria Sponge on the ElectricKit Aga
You will need-
175g soft margarine
175g caster sugar
175g self-raising flour
3 large eggs
4 rounded tablespoons raspberry jam
1 rounded teaspoon baking powder
How to make:-
Measure all of the ingredients into your food mixer and blend for about 2 minutes. Divide the mixture between two tins and level out the top
Set your digital temperature to 190 degrees – and bake for 20 minutes.
Place your cold plain shelf beneath your bake to shield some of the heat coming from the element and remove this for the last 5 minutes of cooking
Remove from the tins to cool. Spread with Raspberry jam, add some whipped cream if desired. Place your other cake on top. You can smother the whole of the cake with butter icing if you so desire.
I am struggling to make a Victoria sponge in my electric Aga oven. The results are never the same as they were when the Aga ran on gas as the mixture seems to cook from the bottom and not all around. Also, the cakes don’t rise as well. I will try using the plain shelf underneath as per your recipe.
Which shelf should I put the tins on? Does the plain shelf go on the shelf below or on the bottom set of runners?
