This recipe is ideal for use with an ElectricKit Converted Aga – set your temperature at 180 degrees<\/strong><\/p>\n

INGREDIENTS<\/strong>
\no 250g\/9oz organic butter (very cold)
\no 225g\/8oz caster sugar
\no 300g\/10\u00bdoz ground almonds
\no 140g\/5oz plain flour (plus 25g\/1oz )
\no 2 free-range eggs
\no 1 tsp cinnamon
\no 1 tsp baking powder
\no 6 plums, stoned and cut into sixths
\no 50g\/2oz flaked almonds<\/p>\n

METHOD<\/strong>
\nIf not using an Aga, preheat the oven to 180\u00baC\/350\u00baF\/Gas Mark 4.
\nYou will need to line a half-sized roasting tin with Bake-o-Glide.
\nSave some time and energy – use a food processor. Pulse the butter, sugar and ground almonds until they resemble rough breadcrumbs. Additionally, spoon out half the mixture into a bowl and set aside.
\nNext, add the flour to the food processor and whizz until it forms a dough.
\nAdditionally, turn this mixture out into the roasting tin and press down using the back of your fingers.
\nYou will need to bake for 15-20 minutes until golden in the middle of your roasting oven, set on the second set of runners down from the top.<\/p>\n

TIME TO CHECK<\/strong><\/p>\n

Look at your bake after 10 minutes to make sure the base is not burning. If it is browning too quickly, place the cold plain shelf beneath your bake
\nRemove and leave to cool for 10 minutes.
\nFor the filling: put the remaining mixture back into the food processor saving a few tablespoons for the topping.<\/p>\n

Next – add the eggs and 25g\/1oz flour, cinnamon and baking powder and whizz into a soft batter.
\nYou will need to spread this over the cooling base.
\nFinally, top with the plum pieces and a little extra caster sugar and a pinch of cinnamon.<\/p>\n

Bake for a further 15 – 20 minutes and then sprinkle with the remaining crumble mix and flaked almonds.<\/p>\n

Bake for a further 10 minutes.
