Set your tin on the second set of runners down from the top.\u00a0 Place the cold plain shelf below your bake to shield some of the heat coming from the element and remove for the last 5-10 minutes of cooking.<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"https:\/\/westbrookcookers.com\/electric-conversions\/#controllable-13-amp\">https:\/\/westbrookcookers.com\/electric-conversions\/#controllable-13-amp<\/a><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Lime and Coconut Muffins.<\/strong><\/p>\n<p>The mixture makes 12 muffins<\/p>\n<p><strong>YOU WILL NEED<\/strong><\/p>\n<p>300g\/10oz Self raising flour<\/p>\n<p>I tsp baking powder<\/p>\n<p>150g\/5oz caster sugar<\/p>\n<p>1 egg<\/p>\n<p>200ml\/7fl oz coconut milk from a tin (i.e. not the alternative to milk version in a carton)<\/p>\n<p>Grated zest of 2 limes (and a squeeze of the juice for good measure)<\/p>\n<p>100ml\/ 3 \u00bd fl oz organic rapeseed oil<\/p>\n<p>50g\/ 1 \u00be oz desiccated coconut<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Leave plain or add a frosting?<\/strong>\u2026.<\/p>\n<p>I used up some cream cheese mixed with icing sugar and a tablespoon of lime juice.<\/p>\n<p>WHAT TO DO NEXT:-<\/p>\n<p>Couldn\u2019t be easier\u2026 bung everything into a large mixing bowl and mix together\u2026.alternatively you could sift flour, combine egg, coconut milk etc in a separate bowl and faff around.<\/p>\n<p>Line a 12 hole muffin tin with cases and dollop in your mixture evenly separating between the 12. Give the bowl to 10 year old daughter who is hassling you for a lick!<\/p>\n<p>Bake for about 20 minutes until risen and golden.<\/p>\n<p>2 oven Aga: place grid shelf on the floor of the oven and muffin tray on top of that with the cold plain shelf on the second set of runners.<\/p>\n<p>All other Agas use the middle of the baking oven.<\/p>\n<p>If not using an Aga then put them in a pre-heated oven at about 190C.<\/p>\n<p>Allow to cool before icing or eat straight out of the oven for a real treat.<\/p>\n<p>Enjoy!<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"Set your ElectricKit converted oven to 190 degrees.
