{"id":825,"date":"2020-09-23T09:14:12","date_gmt":"2020-09-23T09:14:12","guid":{"rendered":"https:\/\/westbrookcookers.com\/?p=825"},"modified":"2022-03-31T09:51:47","modified_gmt":"2022-03-31T09:51:47","slug":"mini-christmas-puddings","status":"publish","type":"post","link":"https:\/\/westbrookcookers.com\/?p=825","title":{"rendered":"Mini Christmas Puddings or one big one?"},"content":{"rendered":"<p><!--more--><\/p>\n<p><strong>Mini Christmas Puddings<\/strong><\/p>\n<p>These puddings are best made ahead of Christmas, but a couple of weeks is sufficient.<\/p>\n<p>Make these mini Christmas Puddings on your ElectricKit Aga<\/p>\n<p><a href=\"https:\/\/westbrookcookers.com\/electric-conversions\/\">https:\/\/westbrookcookers.com\/electric-conversions\/<\/a><\/p>\n<p>&nbsp;<\/p>\n<p>This recipe for mini Christmas puddings will save you from the &#8216;left over christmas eat up&#8217; &#8211; where we all continue to consume the calories even though we have pledged to stop<\/p>\n<p><em><strong>Ingredients you will need:-<\/strong><\/em><\/p>\n<p>225g (8oz) self-raising\u00a0 flour<\/p>\n<p>soft butter &#8211; 225g (8oz)<\/p>\n<p>Breadcrumbs &#8211; 225g (8oz)<\/p>\n<p>Sultanas 225g (8oz)<\/p>\n<p>raisins 225g (8oz)<\/p>\n<p>currants 225g (8oz)<\/p>\n<p>225g (8oz)<\/p>\n<p>\u00bd tsp cinnamon<\/p>\n<p>\u00bd tsp ground nutmeg<\/p>\n<p>free range eggs x 3<\/p>\n<p>3 tbsp milk<\/p>\n<p>Rind and juice of 1 lemon and 1 orange<\/p>\n<p>2 tbsp whisky<\/p>\n<p>&nbsp;<\/p>\n<p>This recipe serves 12 x 175 g (6 oz) puddings<\/p>\n<p>&nbsp;<\/p>\n<p><em><strong>This is what you do:-<\/strong><\/em><\/p>\n<p>Place the flour into a large mixing bowl and rub in the soft butter. Add the other dry ingredients including the marmalade and spices. Beat the eggs with the milk.\u00a0 Additionally put into the mixture\u00a0 the rind and juice of the lemon and orange.\u00a0 Finally, add the whisky to make a dropping consistency, with a little more milk if necessary.<\/p>\n<p>Mix well together and make a wish!<\/p>\n<p>Grease 12 x 175g (6 oz) mini pudding basins and divide the mixture between them. Cover with baking parchment, then a double layer of foil. Place the basins in the large AGA roasting tin and pour in boiling water to come halfway up the basins.<\/p>\n<p>2, 3 and 4-oven AGA &#8211; place the roasting tin on the floor of the Roasting Oven and simmer for 20 minutes and then transfer to the floor of the Simmering Oven for 5-6 hours<\/p>\n<p><strong><em>ElectricKit oven &#8211; Turn your Roasting Oven temperature to 120 degrees and place your tin on the second set of runners down from the top &#8211; cook for 4-5 hours<\/em><\/strong><\/p>\n<p>On Christmas Day, place the basins in the Simmering Oven to heat through for 2 hours (no need for any water bath).<\/p>\n<p>Serve with a brandy sauce, custard or cr\u00e8me fraiche<\/p>\n<p>Conventional cooking &#8211; Start cooking at 200\u00baC (400\u00baF), fan oven 180\u00ba, Gas Mark 6 for 20 minutes then turn the oven 140\u00baC (275\u00baF), fan oven 120\u00baC and cook for a further 5 hours.<\/p>\n","protected":false},"excerpt":{"rendered":"Mini Christmas Puddings These puddings are best made ahead of Christmas, but a couple of weeks is sufficient.
