{"id":808,"date":"2020-09-22T11:20:36","date_gmt":"2020-09-22T11:20:36","guid":{"rendered":"https:\/\/westbrookcookers.com\/?p=808"},"modified":"2022-03-29T13:56:41","modified_gmt":"2022-03-29T13:56:41","slug":"bread-and-butter-pudding","status":"publish","type":"post","link":"https:\/\/westbrookcookers.com\/?p=808","title":{"rendered":"Bread and Butter Pudding"},"content":{"rendered":"<p><!--more--><\/p>\n<p><strong>Bread and Butter Pudding<\/strong><\/p>\n<p>A comfort pudding, and this one is cooked on an ElectricKit Aga &#8211; 30 mins<\/p>\n<p><a href=\"https:\/\/westbrookcookers.com\/electric-conversions\/\">https:\/\/westbrookcookers.com\/electric-conversions\/<\/a><\/p>\n<p>I have used Hot Cross Buns in this recipe but you can use baps or any kind of bread\u2026 brioche is good too!<\/p>\n<p>In addition, an Enamelled Aga Chef\u2019s dish measuring 24cm x 24cm and 5cm deep is good.\u00a0 Using a scrap of butter on a wrapper give the dish a good greasing before layering up with the bread and raisins.<\/p>\n<p><strong>You will need:-<\/strong><\/p>\n<p>6-8 hot cross buns<\/p>\n<p>Butter for buttering buns<\/p>\n<p>100g golden caster sugar<\/p>\n<p>3 large free range eggs<\/p>\n<p>500ml double cream (or single cream or milk)<\/p>\n<p>\u00bd tsp cinnamon<\/p>\n<p>150g raisins<\/p>\n<p>75ml brandy<\/p>\n<p>1 orange<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Method &#8211;\u00a0<\/strong><em>What to do<\/em><\/p>\n<p>First, Soak the raisins in the brandy in a bowl or jug at the back of the Aga.<\/p>\n<p>Slice the hot cross buns in half and liberally butter. Layer these up in your dish.<\/p>\n<p>Grate the zest of the orange over the buns and then squeeze over the juice.<\/p>\n<p>In a bowl crack in the eggs and whisk. Add the cream and sugar and give another good whisk until the liquid has absorbed the sugar.<\/p>\n<p>Pour the raisins in the brandy over the hot cross buns letting any surplus brandy soak into the buns. Even out the distribution of raisins over the buns. Pour over the cream and sugar making sure all the buns are soaked in it.<\/p>\n<p>Leave to stand for a few minutes before placing into the oven.<\/p>\n<p>Set your ElectricKit Aga to 180 degrees<\/p>\n<p>Place your dish on the second set of runners down from the top with the cold plain shelf beneath your dish<\/p>\n<p>Otherwise cook low down in the baking oven for 30-35 minutes.<\/p>\n<p>Serve with cream, ice cream, cr\u00e8me fraiche or custard.
