{"id":770,"date":"2020-09-16T12:57:09","date_gmt":"2020-09-16T12:57:09","guid":{"rendered":"https:\/\/westbrookcookers.com\/?p=770"},"modified":"2022-04-01T10:05:29","modified_gmt":"2022-04-01T10:05:29","slug":"christmas-stolen","status":"publish","type":"post","link":"https:\/\/westbrookcookers.com\/?p=770","title":{"rendered":"Christmas Stollen"},"content":{"rendered":"<p><!--more--><\/p>\n<p>ElectricKit Aga<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"https:\/\/westbrookcookers.com\/electric-conversions\/\">https:\/\/westbrookcookers.com\/electric-conversions\/<\/a><\/p>\n<p>&nbsp;<\/p>\n<p>Christmas Stollen<\/p>\n<p><em><strong>You will need:-<\/strong><\/em><\/p>\n<p>225g Strong white flour<\/p>\n<p>7g pkt fast action yeast<\/p>\n<p>50g caster sugar<\/p>\n<p>75g very soft butter<\/p>\n<p>\u00bd tsp grated nutmeg<\/p>\n<p>1 free range egg<\/p>\n<p>5 tblsp milk<\/p>\n<p>Measure the above into a bowl and mix by hand or in a stand mixer with a dough hook until the dough comes together.<\/p>\n<p>Knead by hand on a floured surface for about 10 minutes, until the dough is soft, shiny and smooth\u2026and still slightly wet.<\/p>\n<p>Lightly oil a bowl and place the dough in it, covered with cling film and leave to rise in a warm place for between 1 \u00bd -2 hours until it has doubled in size\u2026the back of the Aga is perfect for this.<\/p>\n<p>&nbsp;<\/p>\n<p>\u00bd \u00a0tsp vanilla paste<\/p>\n<p>30g flaked almonds<\/p>\n<p>75g soft prunes<\/p>\n<p>75g soft apricots<\/p>\n<p>75g raisins<\/p>\n<p>Zets of one lemon<\/p>\n<p>100g marzipan<\/p>\n<p>Icing sugar to liberally sprinkle before serving<\/p>\n<p><em><strong>What to do next<\/strong><\/em><\/p>\n<p><em><strong>Preheat your ElectricKit Aga to 190 degrees<\/strong><\/em><\/p>\n<p><em><strong>Christmas Stollen<\/strong><\/em><\/p>\n<p>&nbsp;<\/p>\n<p><em><strong>Knock back the dough by hand and then knead in the fruits, nuts and zest until evenly distributed<\/strong><\/em><\/p>\n<p>Next &#8211; roll the dough out directly onto non stick parchment or Bake-o-glide to a rough rectangle<\/p>\n<p>Manipulate the marzipan\u00a0 into a long sausage roughly the same length as the dough.\u00a0 Place this on one of the long sides of dough.<\/p>\n<p>Roll up like a Swiss roll, sealing the edges together by crimping with your fingers, and then turn it into a snail shape with the crimped edges underneath<\/p>\n<p>Slide the bake-o-glide and stolen onto a baking sheet and cover loosely with cling film<\/p>\n<p>Leave to prove again for the second rising at the back of the Aga or a warm place for about 40 minutes. It should double in size again<\/p>\n<p>Remove the cling film and bake on the second set of runners down from the top with the cold plain shelf beneath your bake for about 20-25 minutes (check after \u00bc of an hour) until golden brown and sounding hollow when tapped underneath<\/p>\n<p>Leave to cool and dust liberally with icing sugar<\/p>\n<p>You can freeze this or it keeps well in airtight container in the fridge\u2026so make ahead for Christmas?<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"ElectricKit Aga &nbsp;
