{"id":747,"date":"2020-09-14T15:50:06","date_gmt":"2020-09-14T15:50:06","guid":{"rendered":"https:\/\/westbrookcookers.com\/?p=747"},"modified":"2022-04-01T11:52:53","modified_gmt":"2022-04-01T11:52:53","slug":"carrot-cake","status":"publish","type":"post","link":"https:\/\/westbrookcookers.com\/?p=747","title":{"rendered":"Carrot Cake"},"content":{"rendered":"<p><!--more--><\/p>\n<p>Carrot Cake ElectricKit Aga<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"https:\/\/westbrookcookers.com\/electric-conversions\/\">https:\/\/westbrookcookers.com\/electric-conversions\/<\/a><\/p>\n<p><!--more--><\/p>\n<p><strong>Carrot Cake<\/strong><\/p>\n<p>230g carrots, grated<\/p>\n<p>350g self- raising flour<\/p>\n<p>200g caster sugar<\/p>\n<p>50g chopped walnuts<\/p>\n<p>100g sultanas<\/p>\n<p>\u00bd tsp vanilla essence<\/p>\n<p>6 free range eggs, beaten<\/p>\n<p>3 tsps cinnamon<\/p>\n<p>2 bulbs of ginger from a jar (in syrup)<\/p>\n<p>340ml sunflower oil<\/p>\n<p>1 tsp baking powder<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Frosting<\/strong><\/p>\n<p>175g cream cheese<\/p>\n<p>1 tbsp lemon juice<\/p>\n<p>225g icing sugar<\/p>\n<p>preheat your ElectricKit Aga oven to 170C.<\/p>\n<p>&nbsp;<\/p>\n<p><!--more--><\/p>\n<p>This is such a simple cake to make!\u00a0 It is slightly healthy, you can at least tell yourself that!\u00a0 After all, what is so wrong with eggs, carrots, walnuts and ginger?<\/p>\n<p><em><strong>Here is what you do<\/strong><\/em><\/p>\n<p>Bung everything into a stand mixer and mix it all together<\/p>\n<p>Second, Line a 23cm\/9in cake tin with bake-o-glide or baking parchment and pour in the mixture<\/p>\n<p>ElectricKit Aga &#8211; 170 degrees &#8211; Bake on the second set of runners down from the top with the cold plain shelf beneath your bake<\/p>\n<p>Bake for 1 hour (keep checking)\u00a0 and leave for 10 minutes to cool in the tin before turning out onto a wire rack to cool completely<\/p>\n<p>When the cake is cool, mix the icing sugar into the cream cheese and lemon juice and spread over the top of cake.<\/p>\n<p>Mmmmmmnnnnnn!<\/p>\n","protected":false},"excerpt":{"rendered":"Carrot Cake ElectricKit Aga &nbsp;
