set your top oven to 180 degrees<\/p>\n<p>If not using an Aga preheat your oven to 180C\/160C fan\/gas 4<\/p>\n<p><strong><em>You will need:<\/em>&#8211;<\/strong><\/p>\n<p><strong>225g salted butter<\/strong><\/p>\n<p><strong>175g caster sugar<\/strong><\/p>\n<p><strong>225g self-raising flour<\/strong><\/p>\n<p><strong>400g chopped rhubarb<\/strong> (obviously fresh and in season is better but I do make this all year round and so will use tinned if I haven\u2019t had the foresight to freeze any)<\/p>\n<p><strong>3\u00a0 balls stem ginger from a jar, finely chopped<\/strong> (I also tip in a little of the syrup the ginger comes in)<\/p>\n<p><strong>2 tsp ground ginger<\/strong><\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<p><strong>For the butter icing<\/strong><\/p>\n<p><strong>450g icing sugar (sifted)<\/strong><\/p>\n<p><strong>Grated Zest of one lemon <\/strong><\/p>\n<p><strong>1 tsp lemon juice<\/strong><\/p>\n<p><strong>225g cream cheese<\/strong><\/p>\n<p><strong>1 bulb of ginger from a jar finely chopped and sprinkled over the top<\/strong><\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<p><em><strong>What to do next<\/strong><\/em><\/p>\n<ul>\n<li>Roast the rhubarb for 20 mins in a hot oven, cool and drain (skip this step if using tinned)<\/li>\n<li>Beat together the butter, sugar, eggs, ground ginger and flour and then add the stem ginger, splash of syrup and the rhubarb.<\/li>\n<li>Using a half-sized roasting tin, lined with baking parchment or bake-o-glide spoon in the mixture and smooth the top.<\/li>\n<li>Place in the roasting oven second set of runners down from the top, cold plain shelf beneath and bake for about 50 minutes or until a skewer comes out clean (but keep an eye on it during the last \u00bc hour and be prepared to adjust baking time)<\/li>\n<li>Conventional ovens bake for approx. 50 minutes or until a skewer comes out clean<\/li>\n<li>Let it cool completely before adding your creamy topping<\/li>\n<li>Put the kettle on!<\/li>\n<\/ul>\n<p><strong>If you are feeling in need of a little extra help with AGA cooking, please phone 01544 350382 for details of one to one tuition in your own home<\/strong><\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"Rhubarb and Ginger Tray bake &nbsp;
