They can be for boiling (no.8 \u2013 takes about 8-9 minutes to heat up\u00a0 with the lids\u00a0 down \u2013 don\u2019t leave the lids down!).\u00a0 They can be number \u00a07 (slightly less frantic than boiling \u2013 rarely used in our house), and numbers in between for simmering soups etc<!--more--><\/p>\n<p>Sooo- let\u2019s start.\u00a0 Today we are going to make something delicious and yummy and you won\u2019t be able to stop eating it.\u00a0 It is a Mess of a lunch, with a little tidy up at the end.\u00a0 This recipe is inspired by Anna Jones &#8211; find her wonderful recipes here<\/p>\n<p><a href=\"https:\/\/www.wob.com\/en-gb\/books\/anna-jones\/modern-way-to-eat\/9780007516704?gclid=CjwKCAjwrNmWBhA4EiwAHbjEQEJLyIQOY7Hf8Cv3iJyMNxMwYhtZSDzmE1kU6QmX9natasUmosEcGRoCM8cQAvD_BwE#GOR006679169\">https:\/\/www.wob.com\/en-gb\/books\/anna-jones\/modern-way-to-eat\/9780007516704?gclid=CjwKCAjwrNmWBhA4EiwAHbjEQEJLyIQOY7Hf8Cv3iJyMNxMwYhtZSDzmE1kU6QmX9natasUmosEcGRoCM8cQAvD_BwE#GOR006679169<\/a><\/p>\n<p><strong><em>You will need<\/em><\/strong><\/p>\n<p>2 leeks, finely shredded<\/p>\n<p>A tablespoon of olive oil or coconut oil<\/p>\n<p>Sprinkling of turmeric, fennel seeds, mustard seeds, Garam Masala and an extra knob of butter<\/p>\n<p>400g of potatoes cut into small pieces<\/p>\n<p>And a small squash deseeded but no need to peel, also cut into small pieces<\/p>\n<p>A large handful of mixed herbs and about 4 tablespoons of yogurt or cr\u00e8me fraiche<\/p>\n<p>Half a tin of Cannellini beans<\/p>\n<p>Seasoning<\/p>\n<p>Half a lemon<\/p>\n<p>4 free range eggs<\/p>\n<p>And some grated cheese for good measure<\/p>\n<div id=\"attachment_2010\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-2010\" class=\"size-medium wp-image-2010\" src=\"https:\/\/westbrookcookers.com\/wp-content\/uploads\/2022\/07\/butternut-mess-ingredients-300x272.jpg\" alt=\"Butternut Squash Mess\" width=\"300\" height=\"272\" srcset=\"https:\/\/westbrookcookers.com\/wp-content\/uploads\/2022\/07\/butternut-mess-ingredients-300x272.jpg 300w, https:\/\/westbrookcookers.com\/wp-content\/uploads\/2022\/07\/butternut-mess-ingredients.jpg 500w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><p id=\"caption-attachment-2010\" class=\"wp-caption-text\">Butternut Squash Mess ingredients<\/p><\/div>\n<p><em><strong>What to do :-<br \/>\n<\/strong><\/em><\/p>\n<p><em><strong>How to use your ElectricKit Hobs<\/strong><\/em><\/p>\n<p>Both of your Hobs are set to temperature by a dial &#8211; 1-8<\/p>\n<p>&nbsp;<\/p>\n<p>Choose your hob and turn it to no 6, wait for it to heat up (about 5-6 minutes).\u00a0 Add the shredded leeks to a non-stick pan with a little oil or coconut oil and stir gently from time to time.<\/p>\n<p>Into the pan, sprinkle your chosen tasty seasoning &#8211; I used mustard seeds, turmeric and a dash of Garam, Marsala<\/p>\n<p>On your other hob, (set at number 8) Add the potato pieces to a separate pan.\u00a0 Bring to the boil, then simmer for about 4-5 minutes. (turn your hob down to No 4)<\/p>\n<p>Cut your small squash (or half a large one) leave the skin on, de-seed it\u00a0 and cut into small pieces. Drain the half tin of Cannellini beans and add both to the pan of simmering potatoes and cook\u00a0 together with the squash for about 3-4\u00a0 minutes of the final cooking of the potatoes.<\/p>\n<p>Drain and leave in your colander to steam dry a little (or drain them and place them in your simmering oven if it is on)<\/p>\n<p><em><strong>Back to your frying pan<\/strong><\/em><\/p>\n<p>Reserve three tablespoons of the leeks and set aside.<\/p>\n<p>Turn up the heat under the leek pan\u00a0 (turn to number 8 for added heat-\u00a0 add a little more oil if necessary) and add the potatoes and squash and beans and fry, turning every couple of minutes \u2013 make sure you allow each side enough time to build up a bit of a crust.\u00a0 You are creating some very tasty bits in your frying pan<\/p>\n<p>Now take your mixed herbs (fresh from the garden or in a jar, it matters not) mix them with the reserved 3 tablespoons of Leeks. (I used chives, mint and thyme from my garden) \u00a0Add the cr\u00e8me fraiche or yogurt, the juice of half a lemon and some seasoning and blitz well, using a hand blender.<\/p>\n<p>&nbsp;<\/p>\n<p>Keep turning the hash in the pan until it is crisp and golden.\u00a0 Crumble over some cheese (a good handful) and then crack 4 eggs into a separate frying pan .
